Chances are unless you’re well acquainted with extremely high-end cookware, you probably haven’t heard of Vollrath. In Wisconsin 139 years ago, the company was born. Since then, they have made many acquisitions of smaller companies and split their company into several sectors so they could produce the best products on the market, and that is exactly what they do.

This range uses induction heat which is the most energy-efficient type of cooking stove. Over 80 % of the watts used are converted into heat for cooking.

A digital push-button control panel controls the settings and displays them on a LED display. A temperature memory system records the last temperatures you used for cooking allowing you to select the temperature and timer instantly if you want. An added knob control makes for ease of use and quick function for the user.

This model uses an astounding 1800 watts, the highest of any portable induction cooker, with the high transfer rate of energy this converts to extremely fast heat up and precise cooking.

A massive 14 inch cooking surface is one of the largest in its class giving you the ability to use a wide range of cookware. This unit is built of some of the best materials, so it is heavier than your average single burner induction cooktop, but it is still small and light enough to transport.

Power Settings

1800 watts of 110 voltage power the Mirage Pro’s heating coil, a leader of its class. A 15 amp breaker is needed for 1800 watts of power draw. You have the option to use “power” mode or “temperature” mode. Power level is from 1 to 100, with corresponding temperatures of 80°F to > 525°F. Temperature mode settings are adjustable from 80 to 400 degrees F in 10-degree increments. A memory system allows you to cook at your last known cooking temperatures.

Safety Features

Induction cooking is one of the safest methods of cooking. To use the cooktop, metal cookware has to be applied, and the product powered on. This cooker will power off if the appropriate cookware is not applied in a timely manner. If the cookware is removed in the middle of cooking, the unit will power off as a safety feature. There’s also overheat protection and an empty pan auto shut-off feature. With a small-article detection feature, it will not heat up small metallic items such utensils and rings.

Customer Reviews

This premium, commercial-grade portable cooker is well-received with mostly positive reviews. Customers love it’s versatility and durability. A common consensus was “you get what you pay for” – in this case, you get a professional built quality, with a temperature range that is varied enough for even the serious chefs to use. The only purely negative review I found was from one owner who used the Mirage Pro for over a year, and then started to have problems with it saying it burnt his cast iron grill and 2 woks. Other users were quick to suggest to contact Vollrath directly instead of dealing with seller, as they have excellent customer support and it’s still well within the 2-year warranty.

The Mirage Pro is powerful, and if you’re not careful you might cook with more heat than you intended to. The sensor is placed at the bottom of the ceramic top, which means that the actual temperature of the pot is a lot higher than what the temp sensor says. It’s recommended to use power mode settings 11-20, and have a feel for how your pots and pans respond to different power levels.

Another complaint was that the fan might be too loud for some, especially for those with smaller, quiet kitchens. The controls can be daunting to some, and takes a while getting used to. If want simple controls with lesser options, get the Nesco PIC-14 instead.

One ‘fairly satisfied’ reviewer challenged its misleading product information. In the manufacturer description, they claim a maximum of 14″ cooking space, however in the user manual they recommend using cookware 4.5 to 10.25″ in diameter. That person tried to use a 10-inch stockpot with poor results. This varies with the the kind of cookware you use, as other users have stated that the cooktop can heat a 12-inch pan evenly. Cast iron cookware seems to work best with this cooker.

product name consCons:
Commercial grade equipment is expensive, and this unit is no exception. The extra features and large cooking area make this unit heavier than a standard portable cooktop.

Advertised as a 14 inch diameter cooker, but works better with smaller diameter cookware. As with all electric induction cookers you have to use the correct cookware, or the cooktop won’t heat up at all.
